Kanda Poha or Onion Poha is a popular breakfast belonging to the maharashtrian cuisine. It is light and easy to make. Red poha is preferred as brown rice is healthier. It made from red poha or white poha. It can eaten as an evening snack too.
INGREDIENTS (measuring cup used, 1 cup = 250 ml)
1.5 cups poha - red or white beaten rice or flattened rice
1 large onion, finely chopped
¼ tsp turmeric powder
1 tsp mustard seeds
2 or 2.5 tbsp peanuts
10-12 curry leaves
1 green chilli, chopped
1 tsp sugar or as required
1 or 1.5 tbsp oil
Salt as required
Method of Preparation:
Rinse poha well in water till it becomes very soft. The crunchiness should be gone and it should be able to be crushed or mashed very easily. Add salt, sugar along with turmeric powder to poha and mix gently. Take a pan, add peanuts and dry roast them till they are crunchy. Add oil and heat it. Crackle mustard seeds, later add onions.
Saute well till they are translucent. Add green chillies and curry leaves. Saute for 30 seconds. Later add roasted peanuts and stir. Add poha, stir cover and then steam the poha for two or three minutes on low flame. Check after 1.5 minutes and then stir again. Switch off flame. Let poha be covered for 1 or 2 minutes. Remove lid, sprinkle lemon juice, grated coconut and coriander leaves. Stir gently and serve the onion poha.
