‘Eenthu’ is a popular item that can be found aplenty in Kerala, especially in the Malabar region. The seeds of these plants, which belong to the family of palm trees, are nutritious and can be used for preparing some great food items. Well it has to be added here that, before going to prepare any item, you have to crush the ‘Eenthu’ seeds and get a nice powder. ‘Eenthu Pidi’ is porridge like dish and go for a change from the routine breakfast dishes here.
Ingredients
Eenthu Flour – 1 Cup
Cumin Seeds 1 tbsp + 2 tsp
Grated Coconut – 1 Cup
Salt – To taste
Water – As required
Yam – 2 Kg
Cowpeas – 1 Cup
Shallots – 4
Green Chillies – 6
Turmeric Powder – ½ tsp
Preparation:
Begin the process of making ‘EethuPidi’ with coarsely grinding half a cup of the already grated coconut along with 1 tbsp of cumin seeds and salt. Make sure that the mixture attains a smooth texture. Up next, you can mix it with ‘Eenthu flour’ and add water and mix it. While adding water, it is preferred to use hot water instead of cold one. Combine all the ingredients very well and you can use a spoon for the purpose and put it aside for five minutes to take rest. After allowing it to take adequate amount of rest, again make good dough and make out some balls in the size of a lemon.
Now, it is time to cook the soaked cowpeas and yam. Before going for the purpose, make sure that both the cowpeas and yams are properly rinsed and soaked with enough water. Cook these soaked items using a pressure cooker. Cook for a good amount of time and wait to hear at least 3 whistles before you remove those out form the pressure cooker. In the meanwhile, you can go for grinding these ingredients – shallots, green chillies, 2 tsp cumin seeds, turmeric powder and half cup of grated coconut. Grind all the ingredients to get a smooth paste. You can use adding a small amount of water during the process. However, don’t add too much of water, as we want to get a rather thick paste.
As you are expected to have prepared the cooked mixture of cowpeas and yam during this course of time, you can now add the thick paste, which we have just prepared in the above step. Combine the mixture well and add adequate water to it. Boil this mixture for a couple of minutes. During this time, you can also add enough salt as well to the mixture. Wait for the bubbles and when you get the feeling of them being boiled, add the lemon sized balls that we have prepared earlier. Now, you have to cook this mixture for another 10 – 15 minutes in a low flame. Well, that will land you in delicious ‘EenthuPidi’.
